250g (2 US cups) flour
125g (1.1 sticks) butter
1 egg yolk + some water
A pinch of salt
Start by mixing the flour, salt and softened, room temperature butter.
Mix the egg yolk with a little water, then mix it into the dry ingredients.
Knead the pastry for a few minutes, until it's even and soft.
If it is too crumbly, you can add a tablespoon of cream.
Roll out the dough and it's ready for use!
