To make some custard, you will need:
120g of sugar
a vanilla pod or some vanilla sugar
a pinch of salt
35cl of whole milk
35g of cornstarch
35g of butter
Pour the milk into a pan and heat gently
Split open the vanilla pod and scrape out the seeds.
put the vanilla pod and seeds in the pan, then bring to a boil.
In a large bowl, beat the egg yolks with the sugar until the mixture becomes pale
Add the corn starch and continue whisking, like this
Remove the pan from the heat
Take out the vanilla pod
Pour the contents of the pan into the bowl, mix energetically.
Then pour the mixture into the pan and bring to a boil while whisking continuously
As soon as the custard starts to boil, turn off the heat and pour it once again into the bowl to prevent it from cooking further.
If you wait too long before turning off the heat, the custard will be over-cooked and lose its smoothness.
Leave the custard to cool for a few minutes, then incorporate the butter and whisk vigorously.
