Finely chop eight cloves of garlic

Chop half a kilo of spinach like this

1/2 kilo spinach

Heat one table of sunflower seed oil in a pan,

Cook until the onions turn brown, this will take roughly 5-7 minutes. Fry the onions on a low heat setting

Boil the spinach

Continue stirring the onions so that they don't burn

next add the tomatoes and stir well

Put the onions and the tomatoes int eh blender

Blend them until they have an even consistency, empty them into the pan,

Next blend the spinach

Add the spinach into the onion and tomato mix and stir well.

add the paneer or cottage cheese into the spinach mix

Paneer

the paneer can be friend or eaten plain.

You can also add some fresh cream

Palak paneer can be served with roti (indian flat bread) or naan.
